Commis Chef
Working in a well organised kitchen the job of commis chef is to assist the chef de partie, the number varying with the amount of work done by the partie. For example: the vegetable partie is larger than the fish partie, due to the quantity of work to be prepared, so there are more assistants on that partie. The first commis is usually capable of taking over a great deal of responsibility and in some cases will take charge of the partie when the chef is off duty. Another name for commis chef is assistant chef.
The job of an apprentice chef is learning the trade, moving on to each of the parties, to gain knowledge in all sections of the kitchen.
It can take one to two years of being a commis chef before you can get promotion to Chef de partie then Sous chef and finally Head Chef. In each job you pick up different skills. Therefore, it is important to learn skills from each different chef as each chef does it slightly differently - always be prepared to learn.
Different chefs have varying approaches to teamwork and customer care. The fact remains that it is the more closely knit teams that get the customers returning. You have a real role to play in this, whatever your personality and to whatever stage you have reached in learning the skills of food preparation and cooking. Take on that role with enthusiasm and energy and you will go far.
